As a first step to prepare chicken curry, bring the broth to the boil, keeping a few tablespoons aside; then add the chicken breast, previously washed and divided in half, and let it cook for about ten minutes from when the broth will boil again. Turn off the heat and, with the pot covered, leave the meat in the broth for about fifteen minutes.

Put the onion with the oil and the leftover broth spoons in a cold pan. We salt everything and let it simmer for about 6 minutes. At this point we add the curry, add the wine and add the tomato paste; mix well and let the sauce cook for another 5 minutes. When the sauce is cooked, add the mayonnaise sauce and mix everything well, flavor with lemon juice and season with salt.

Drain the chicken from the cooking broth, fillet it by hand trying not to get too small pieces and put it in a bowl. Finally, season the chicken with the sauce and mix everything very gently before letting it rest for about 6 minutes.

We serve the chicken curry sprinkling it with a little chopped parsley.
