First of all, to prepare the Tyrolean dumplings, put the stale bread, previously broken into pieces, in a bowl. So let’s wet it with the necessary milk and let it rest so that it swells.

Then squeeze it well and work it with the prongs of a fork to chop it up. At this point, add the speck, 3 or 4 tablespoons of grated parmesan, the previously chopped parsley, the beaten eggs and mix everything together. Finally, add the sifted flour and mix until a consistent mixture is obtained.

Then we divide the mixture into many piles of the size of a walnut and with wet hands we give them a spherical shape.

Meanwhile, bring the meat broth to a boil and cook the dumplings for about 9 minutes. We add salt.

The Tyrolean dumplings are now ready to be served.
