First of all, to prepare the mint ice cream with peaches, mix the yogurt with the icing sugar and a spoonful of mint syrup.
Then pour everything into a metal bowl and put it in the freezer, stirring often to prevent ice crystals from forming; otherwise we can use an ice cream maker following the instructions.
Meanwhile, sear the peaches in boiling water for a few seconds. Drain them, peel them, divide them in half, remove the core and finally cut them into wedges.
We take the ice cream from the freezer and put it in the bowls, decorate with the peaches and drop a drop of mint syrup in the center.
