First of all to prepare the lemon sorbet we prepare the syrup. Then cook the water and sugar for about 10 minutes since it will start to boil and let it cool.
Then mix the syrup with the lemon, the previously grated zest and a pinch of vanillin. Finally, pour the mixture into the ice cream maker and when it has slightly congealed, add the egg white.
When the lemon sorbet is ready, place it in the bowls with a scoop of watermelon and if you like a mint leaf.
If you don’t have an ice cream maker, put the sorbet in a bowl and let it thicken in the freezer, stirring occasionally.
