First of all, to prepare the turkey meatloaf, mix together the turkey, ham, ricotta, eggs and parmesan. We season everything with salt, pepper and grated nutmeg. We mix everything well and then form a sausage.
On a sheet of previously buttered aluminum foil, place two slices of mortadella slightly overlapping; delicately lay the sausage, cover it with the other slices and roll up the edges a little.
We then close the meatloaf in foil and cook it for the first twenty minutes at 200 degrees and for another 40 minutes at 180 degrees.
When cooked, make a hole in the aluminum foil and place the liquid formed in a pan. Add the broth and bring everything to a boil to reduce it and make it thicker; add the garlic divided in half and the sage. Finally we filter the sauce before pouring it on the turkey meatloaf already cut into slices.
