As a first step to prepare our exotic macedonia, dissolve the sugar with 100 g of water and 2 tablespoons of lemon juice; let it simmer for a few minutes, remove it from the fire and add the ice to let it cool.
Let’s keep the banana aside. We peel the rest of the fruit, then cut it and leave the lychees whole.
Transfer the fruit to a bowl and sprinkle it lightly with a little lemon juice, then season it with the sugar syrup and let it rest for about 20 minutes in the refrigerator.
We add the banana, previously peeled and cut into chunks. We mix everything well and sprinkle with fresh sparkling wine. Our exotic macedonia will then be ready to be served.
