First of all, to prepare our delicious guacamole sauce, we dedicate ourselves to the onion, then peel it by removing the ends and the first external layer and chop it very finely, therefore also chop the coriander.

We then take the avocado and cut it in half, remove the stone and, using a spoon, remove the pulp and transfer it to a mortar, add the lime juice and crush everything until we obtain a smooth cream.

At this point we add the chopped onion and coriander, crush everything again, taste and add salt if needed.

We wash and dry the tomato very well and cut it into very small cubes, then add it to the sauce, our guacamole sauce is now ready to be served.

How to store guacamole:

We can store the sauce for up to 2 days in the refrigerator in an airtight container.

Useful tips:

If you prefer a guacamole with a slightly spicier and more intense flavour, you can add a few drops of Tabasco or chopped chilli pepper.

If you don’t have a mortar you can simply use the edges of a fork to make the avocado creamy.

You can replace the white onion with the red one or fresh spring onion, you can also replace the coriander with chopped parsley.

To obtain a delicious guacamole it is essential to use a ripe avocado that is soft but not too soft.
