Let’s start preparing the omelette with smoked cheese by putting the speck in a pan, possibly non-stick, without further seasonings to make it sauté. So let’s drain it on a sheet of absorbent paper.

We take a bowl and begin to beat the eggs with a fork to mix the yolks with the whites; add the smoked cheese, speck, parsley, previously chopped and finely sliced ​​onion. At this point add the salt, a sprinkle of pepper and mix everything well.

In a large, non-stick pan, heat the oil and pour the egg mixture trying to distribute it evenly. We wait for a few seconds for the edges to congeal slightly and with the help of two wooden spoons we try to bring the congealed edges towards the center of the omelette. We do this for 2-3 times and then let the eggs harden definitively over low heat without stirring.

Finally, turn the omelette with smoked cheese upside down on a lid wet with water or on a flat plate. Let’s do it, then, slide it back into the pan to cook it just about a minute. Our omelette will be ready to be served.
