As a first step to prepare our delicious yogurt pancakes we take the eggs and separate the egg whites from the yolks; mix the egg yolks well with the yogurt, vanilla and oil. We take a bowl where we sift the flour and baking powder, then add the sugar and baking soda.
At this point we also add the mixture and mix everything well. Then gradually incorporate the egg whites previously whipped until stiff.
Remember to mix the mixture from bottom to top to avoid disassembling the egg whites.
To cook our yogurt pancakes, heat a non-stick pan and grease it with a little butter; then pour in a few ladles of dough at a time trying to form round pancakes with a diameter of 10-12 cm. and cook them for a few minutes per side. The pancakes should be puffy and golden but not too dark.
Our yogurt pancakes are now ready to be served; they can be accompanied with fresh fruit or whipped cream.
